Instructions: 1. Grease a standard muffin pan or line it with paper muffin liners. Preheat the oven to 350 degrees F (175 degrees C).
In a mixing bowl, mash the bananas. Add the egg, vanilla extract, brown sugar, granulated sugar, and cinnamon. Stir well to combine.
In a separate small bowl, stir together the flour, baking powder, baking soda, and salt. Add this mixture to the banana mixture and stir until just combined. Be careful not to over-mix.
