Healthy Banana Muffins Recipe

Ingredients: – 4 bananas, about 1 1/3 cups, mashed – 1 large egg – 1 tablespoon vanilla extract – 3 tablespoons light brown sugar – 2 tablespoons granulated sugar – 1 teaspoon ground cinnamon – 1 teaspoon baking powder

Instructions: 1. Grease a standard muffin pan or line it with paper muffin liners. Preheat the oven to 350 degrees F (175 degrees C).

In a mixing bowl, mash the bananas. Add the egg, vanilla extract, brown sugar, granulated sugar, and cinnamon. Stir well to combine. 

In a separate small bowl, stir together the flour, baking powder, baking soda, and salt. Add this mixture to the banana mixture and stir until just combined. Be careful not to over-mix. 

1. Gently stir in the melted butter. 2. Spoon the batter into the prepared muffin pan, filling each muffin cup about 2/3 full.

Bake in the preheated oven for 18 to 25 minutes, or until a toothpick inserted into the center of a muffin comes out clean. 

Allow the muffins to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
