Quick Chilled Pea Soup

– 2 cups frozen pea – 1 small onion, chopped – 1 garlic clove, minced – 2 cups vegetable broth – 1/4 cup fresh mint leave – Salt and pepper to taste – 1/4 cup plain yogurt (optional, for creaminess) – Ice cubes (optional, for extra chill)

Ingredients

In a medium-sized saucepan, heat a little olive oil over medium heat. Add chopped onion and minced garlic. Sauté until the onion is translucent, about 3-5 minutes.

Add frozen peas and vegetable broth to the saucepan. Bring the mixture to a simmer and cook for about 5 minutes, until the peas are tender.

Remove the saucepan from the heat and let the mixture cool for a few minutes.

Transfer the pea mixture to a blender. Add fresh mint leaves and blend until smooth.

If desired, add plain yogurt to the blender for extra creaminess. Blend again until well combined.

Season the soup with salt and pepper to taste. Adjust seasoning as needed.

Transfer the soup to a bowl or container and refrigerate until chilled, about 1-2 hours.
